1Stainless steel has always been my choice. It exceeds the level of corrosion resisistance offered by aluminum ( the minimum material requirement) and is far less likely to tear during installation in a mansonry chimney. The fine print is this, although you are venting gas appliances now - the 100 year old has has vented oil & maybe coal appliances in the past. The deposits they leave behind never completely leave the chimney and aluminum will not withstand their corrosion.
The answer is clearly stainless steel from a proffesional point of view.
